The Teaches of Peaches: Bonchak Wins SE Brewers Cup

Jonathan “Peaches” Bonchak is your 2013 SE Brewers Cup champion! Mr. Bonchak competed using a washed coffee from the Haru cooperative in southern Ethiopia, roasted by Counter Culture Coffee, for whom Mr. Bonchak works out of Durham headquarters. This coffee came from the same cooperative as the coffee Katie Carguilo used in her 2012 United States Barista Championship winning performance.

Mr. Bonchak’s brewing method called for a ratio of 25 grams of coffee to 300 grams of water, using one of Counter Culture’s own signature Bonmac one-hole ceramic dripper. Peaches told the judges that “to me, this coffee is the heart and soul of specialty coffee.”
