Who doesn’t love an international pop-up? Coffee Collective recently brought the full Scandinavian experience to Rosslyn’s London Wall location. Onyx Coffee Lab will soon be following suit. And in another bit of transatlanticism, Brooklyn’s Sey Coffee is hosting Paris’s Motors Coffee for a full cafe takeover.
Motors Coffee was co-founded by 2025 French Brewers Cup champion Thomas Philips, who will be making the trip to Bushwick for the pop-up. Per the announcement, it will be the first time New Yorkers will get “the Motors Coffee experience.”
The menu for the upcoming weekend—Saturday, September 19th and Sunday the 20th—will include espresso drinks made with freeze-distilled milk. Now commonplace is barista championships, freeze-distilling milk removes much of the water content, creating a more concentrated richness and sweetness.
The pop-up will also double as a release party for a new limited edition collaboration box set from the two coffee companies. It features a washed Panama Gesha from Digna Nuñez that’s been processed by Panama City’s experimental coffee lab Lost Origin. Also included will be a graffiti-inspired Motors x Sey t-shirt, a handmade ceramic mug by Peyton Perron at Danny D’s Mud Shop, and a “few more small surprises.” Each box will be individually hand-painted and completely unique.

Sey will kick off the festivities today by hosting a cupping with the crew from Lost Origin that will feature the collaboration coffee as well as a few other offerings from Lost Origin. Cuppings occur at 11:00am, 1:00pm, and 3:00pm and is a ticketed event, which are available here.
