Florida’s white-hot coffee scene was a regular feature in last year’s Builds series, and we’re heading back today for another sip. Today’s entry in the Build-Outs feature series takes us to Orlando’s Filigree Coffee.

For those who aren’t familiar, will you tell us about your company?
At Filigree, our foundation is built on transparency and a deep commitment to presenting coffees we truly believe in—coffees that meet our standard of excellence. We are a modern coffee roaster focused on highlighting complex acidity and sweetness through precise, thoughtful roasting. Our goal is simple: to let each coffee speak clearly of its origin. Every coffee we roast is a true reflection of its terroir, meticulous processing, and exceptional quality. Every decision we make is grounded in respect—for the producers, the growers, and the craft that brings these coffees to life. It’s our responsibility and privilege to present their work in its best form.

Can you tell us a bit about the new space?
Our cafe was thoughtfully designed to provide exceptional coffee experiences in a modern yet welcoming environment. Every aspect of the space is centered around the product itself—coffee—eliminating unnecessary distractions in favor of a streamlined, intentional experience.
The design philosophy focuses on executing the fundamentals at the highest level: quality, consistency, and genuine hospitality. We believe great coffee is only part of the equation; creating meaningful interactions and delivering excellence every day, even when it’s difficult, is equally important.
The checkout area was intentionally designed to feel more like a host stand than a traditional point of sale, creating a warmer and more personal welcome and allowing for more meaningful guest interactions from the moment someone enters the cafe.
At the heart of the space is a custom-built hand brew bar designed specifically to elevate coffee preparation and showcase craftsmanship. The station features integrated scales, dedicated kettles, a built-in pitcher rinser, and an additional steam wand, allowing our team to prepare hand brewed coffee and non espresso milk-based beverages with precision and efficiency. These purpose-built elements ensure that quality and consistency remain at the forefront while creating a more engaging experience for guests.
The result is a space that feels approachable, refined, and purpose-driven—a modern coffee experience built around craftsmanship, connection, and care.

What’s your approach to coffee?
We strive to elevate the everyday coffee ritual into moments of connection, discovery, and delight. We are a modern coffee roaster focused on highlighting complex acidity and sweetness through precise, thoughtful roasting.
Any machines, coffees, special equipment lined up?
Our bar was thoughtfully designed to balance precision, efficiency, and hospitality at every touchpoint. Espresso service is powered by a La Marzocco GB5 AV paired with two Mahlkönig E80 grinders dedicated to our house espresso and rotating single-origin offerings, alongside a Mahlkönig E65 reserved exclusively for decaf.
For manual brewing, we built a custom hand-brew station featuring integrated scales, kettles, a pitcher rinser, and a Modbar steam wand, creating a seamless workflow for both coffee preparation and guest interaction. Anchoring the brew bar is a silver Weber EG-1, chosen for its exceptional clarity and performance in showcasing rare and expressive coffees.
Behind the scenes, the icon #200 Mahlkönig EK43 handles our batched filter program, delivering consistency and quality at scale. The entire workspace is finished with commercial-grade stainless steel countertops, creating a clean, functional environment that reflects our commitment to craftsmanship, precision, and thoughtful design.

How is your project considering sustainability?
This could pair nicely with the equipment section and maintain the same elevated, modern tone:
At Filigree, sustainability is approached through thoughtful decisions rather than grand gestures. We encourage guests to enjoy coffee in-house whenever possible, serving beverages in ceramic and glassware that elevate the experience while reducing single-use waste. Our drink program is intentionally designed around cups and lids that eliminate the need for straws, and we prioritize compostable and environmentally conscious materials throughout the cafe.
Beyond the products we use, we believe sustainability extends to people. We are committed to providing competitive wages and creating meaningful opportunities for our team, recognizing that a healthy coffee community begins with those who make it possible every day.
The result is a minimal, modern coffee experience that values quality, intentionality, and responsible stewardship—creating a space that is as thoughtful about its environmental impact as it is about the coffee it serves.
