And now we reach endgame. This is the final—yes, the very last—newly opened or under construction coffee bar as part of the 2026 Builds-Out of Coffee feature series. It has been a true pleasure and distinct privilege to bring you this year’s Builds, and a rousing showing from our participating cafes all over the world. We’ll wrap up this year’s series with our annual Analytics of Autumn breakdown, showcasing the top trends and insights from the last few months of new cafe features. But first—and last—we take you to Lemma Coffee Co in Dallas, Texas, a roaster/retailer with multiple locations and a brand new cafe inside Mockingbird Station.

As told to Sprudge by Daniel Baum.
For those who aren’t familiar, will you tell us about your company?
For sure, Lemma Coffee Co is a coffee company based in the Dallas metroplex. We roast for ourselves, wholesale partners, and currently soon to be four cafes. We look to source, roast, and serve coffee at a very high level while keeping the brand and atmosphere fun and approachable for our customers.
Can you tell us a bit about the new space?
Yeah, the new shop is a big step for us. It’s in a well established shopping center called Mockingbird Station in Dallas. There’s lofts, a really cool movie theater, and retail stores that we’ll be neighboring. Our shop is right at 1,300 square feet. It’s on the smaller side for shops around here, but it’ll fit right in with our first three. It has a great deal of natural light, a massive (to us) bar that will allow us to keep the experience coffee focused.
What’s your approach to coffee?
Over the last nine years we’ve worked to build relationships that offer sustainability for growers and us. We’ve built great relationships with exporters and producers who share those values. Our labels highlight the producers, we share their stories, and ultimately roast and brew their coffee to the best of our ability.
Any machines, coffees, special equipment lined up?
We’re going with another three-group Slayer LP for this shop. This will be our fifth LP. We simply love the programability, intuitive interface, and design they have to offer. Plus, we install and service our own equipment, so this keeps our maintenance and troubleshooting as seamless as possible. Grinders wise, we’re going with Ceado for espresso and relying on the tried and true Mahlkönig EK43. For drip, we’re going with a Twin G4 Curtis and will use a number of different slow bar brewing devices.
How is your project considering sustainability?
This is a pretty mild buildout in comparison to something starting from scratch. The heavy duty electric and plumbing is already in place, so we’re fortunate that waste from this project is very low!
What’s your hopeful target opening date/month?
Hoping to open by the end of September!
Are you working with craftspeople, architects, and/or creatives that you’d like to mention?
Nah, we keep it simple!
Thank you!
Thank you guys for continuing to do this and for contributing so much to specialty coffee.
