Picture the state of Texas. The Texas Panhandle sits atop it like a ten-gallon hat, and right there in the middle is the city of Amarillo. With a population of around 200,000, Amarillo strides the historic U.S. Route 66, halfway between Oklahoma City to the east and Albuquerque to the west. Here’s where you’ll find the newly opened, newly relocated home of 107 Roasters & Cafe, a curious “rock-and-roll themed cafe” with a unique take on coffee here in 2026. Let’s learn more.

For those who arenโt familiar, will you tell us about your company?
107 Roasters & Cafe is a rock and roll themed cafe with 107 music themed beverages on the menu and an in-house roasting facility with 10 years of history. We just relocated from DFW to Amarillo. We’re family owned and bake fresh baked goods daily in house. Our motto is Relate, Educate, and Caffeinate. Our drinks are named after classic songs or music related. For example, “Livin’ La Vida Mocha” is a Mocha FroJava (Frappe made with real espresso and clean ingredients), “Wipeout” is a tropical tubular coconut limeade (sparkling and can have custom amounts of caffeine or none if requested) and Berry White, a blueberry white mocha.
Can you tell us a bit about the new space?
Rock and roll vibes at the cafe, manufacturing and retail at our manufacturing next door. Vinyls, music, and rock on the walls with our menu being featured not only on the wall, but on CDs and in jukeboxes as well with art paying tribute to classic albums from yesteryear. The roasting facility offers free public tours and features a coffee museum that pays tribute to the growing, history, and the packaging of coffee throughout the years.
Whatโs your approach to coffee?
Coffee should be FUN, exciting, and an expression of yourself. We break the rules when necessary while staying true to the classics and adapting to customers’ needs and desires. We call our customers “Fans” because we believe in providing a service to the public by creating an unique experience designed around our model “Relate, Educate, and Caffeinate.” We want our fans to strike up a fun conversation with our staff, teach them something about coffee they didn’t know, and serve a drink that not only matches their needs, but is also an extension and expression of themselves. We are the bridge between traditional, third wave, and modern casual drive through concepts. We keep traditional alive with drinks like cortados and smaller drinks with more espresso in them at our cafe and we push for more traditional low acidity coffees at our roasting facility. We push the envelope of experimentation in a post-third wave world with drinks like our espresso shooters, a homage to the origins of Italian espresso. We also continue to find new ways to caffeinate our fans with custom energy drinks, Frappes with Oreos, and a S’mores style drink with a marshmallow and graham cracker rim. We stay experimental while staying approachable to anyone who walks in.
Any machines, coffees, special equipment lined up?
We have a Loring Kestrel 35-kilo roaster, a Nuova Simonelli Aurelia Wave 2, and we make K-Cups in house. Our most popular coffees are Bombay Bluebonnet (An India Monsoon Malabar & Kona Blend), Espresso Journey (A Kenya/Colombia blend designed for espresso machines both for cafes and home), and we even have a coffee infused steak rub that’s good on anything.
Whatโs your hopeful target opening date/month?
May 30th. Our cafe will re open in Amarillo after moving from McKinney, TX
Are you working with craftspeople, architects, and/or creatives that youโd like to mention?
We have a team of owners and great talented baristas. Elaine Krazer is an award winning project manager and scheduler that has worked for large scale companies like NASA, Tesla, and Meta and grew up on a coffee farm in Kenya. Roaster Dave is a retired mechanic that fell in love with roasting. Their son, Patrick, studied coffee shops for 10 years, designed all 107 drinks and albums and handles the cafe operations. Daron Casler grew up with Elaine overseas and is a wedding DJ and has worked in radio prior. Kristi Casler is Daron’s wife and has been baking for locals for several years. The artwork in our shop is an amalgamation of the work of many of our baristas who also do art on the side.
