It was a big day for the Coffee Collective at the Danish Barista Championship. AnneStine Bae won the top spot while Christian Ryberg got second. Congratulations to Mathias Arguimbau of Café Norden / Estate Coffee for securing third prize.

Danish Barista Championships have historically had the most innovative and daring signature beverages and 2011 was no exception. AnneStine won her judges over with her signature drink: “Liquid Frikadeller“.

“I traveled to Panama, and with the help of Rachel Peterson, cooked this traditional frikadeller using meat grown on her farm.” In front of judges, AnneStine pureed the frikadeller, mixing that with single origin Esmeralda espresso. “James Hoffmann inspired me to use a wood neck flannel filter to thin out the paste.” AnneStine then flash infused red cabbage and pickles in a soda syphon and combined the soda and frikadeller mixture in a tall rocks glass. “You can use chocolate and caramel and creme fraiche and make a rather boring signature drink, but I wanted to be daring and draw from traditional Danish recipes of my ancestors.” Skål!
