Is there a specific story or meaning behind the name of the drink?

We’ve always wanted to create a signature drink that featured a non-dairy cold foam, and after a lot of testing, coconut milk stood out. It had the best flavor and the most beautiful texture. From there, we started brainstorming what would pair well with coconut, and the first thing that came to mind was tropical fruits and mangos. It felt natural and nostalgic—bright, tropical, and fun. Perfect for the summer.

What inspired the creation of this drink?

Summer in New York! We want to create a menu that felt refreshing and approachable a way for people to cool down but still enjoy new flavors. It’s the kind of drinks you want to sip on during a hot walk through the city or hanging out with friends at the park. Something light, energizing, and just different enough to spark curiosity.

Who created it? Individual? Team effort?

Definitely a team effort. I started working on the base recipe, and then all of the team jumped in to help fine tune it. Their feedback really helped bring it to life and during those testings, we ended up developing a few more summer drinks too, like the mango sparkling matcha!

Are there any unique or locally sourced ingredients used in this drink?

Everything is made in-house from the mango syrup to the coconut cold foam. We like keeping things simple, fresh, and made with care.

How did you work to balance the flavors and create the perfect taste profile?

Mango and coconut were flavors I grew up with my mom would often make desserts using that combo, so the pairing was already familiar and comforting to me. But I wasn’t sure how it would all come together with cold brew. Once I started testing, I was surprised at how well the richness of the coffee connected the creamy coconut foam with the sweet brightness of the mango. It felt layered but still super easy to drink like something you’d crave on a hot day.

Would you recommend any food pairings to go along with it?

I think the Mango Cold Brew with Coconut Cold Foam pairs really well with a rich brownie or a bright, fruity tart. The drink has that balance of creamy, sweet, and refreshing, so it plays nicely off something indulgent or citrusy. It’s a great way to round out a little afternoon treat.

What are people saying about it?

Our guests are loving this combo! It definitely stands out on the menu and people are intrigued. Some are a little hesitant at first because it’s not something they’ve seen before, but once they try it, they’re surprised by how much they enjoy it. We’ve had folks come back just to tell us how unexpectedly delicious it was which is always the best kind of feedback.
