On the day of the Sabbath, God rested… and enjoyed a delicious cup of coffee.

The folks at Sabbath Coffee Roasters in Royal Oak, Michigan (suburban Detroit) have a fun story to tell, growing from a home roaster operation into a succesful coffee company that just opened its second location. This is the perfect moment to take a closer look.

The 2026 Build-outs of Coffee is presented by DONA, Pacific Barista Series, and La Marzocco.

As told to Sprudge by Brittne Saenz.

For those who aren’t familiar, will you tell us about your company?

Small family-owned roastery that started roasting out of our home in 2015. In 2020, we opened our first shop and roastery, and fast forward to May 2026, we are getting ready to open our second shop with a larger roasting facility just a few miles away.

Can you tell us a bit about the new space?

A to-go cafe featuring dialed in batch brew coffees, our famous frozen lattes, a La Marzocco PB two-group, a prep kitchen, a 1,400-square-foot production space featuring a Loring S15, Sovda lift and precision fill mini while holding a cupping and training lab.

What’s your approach to coffee?

Our motto is “A Cup for Everyone.” We love to offer a wide variety of origins and blends for every palette. Whether its a daily driver or a crazy co-ferment, we believe there is a cup for everyone.

Any machines, coffees, special equipment lined up?

La Marzocco PB two-group with custom powder coat, Loring S15, Sovda lift and precision fill mini, Brood nitro dispenser and FETCO brewers and frozen drink machines.

How is your project considering sustainability?

We view sustainability through the lens of what we can do locally. Working with importers that help to create sustainable systems at origin, and working with as many local and stateside manufacturers as we can.
