It would be hard to contain our ardor for the ongoing world of Sprudge Maps, a global coffee shop discovery tool and vivid feature series presented right here on Sprudge. The program was born out of the pandemic, but today has blossomed into a big idea all of its own, offering cafe owners the ability to list their cafes for free on Sprudge and be considered for a special spotlight feature. Not unlike the ol’ Sprudge Maps in the first place, Edina Coffee Roasters also began life as a pandemic idea. Today it’s a full-fledged coffee roasting company in the Minneapolis, Minnesota suburb of Edina, which is home to a thriving restaurant and shopping scene. Hello! My wife Sara and I own Edina Coffee Roasters. Before that I had been working in coffee since 2008 working for bigger coffee companies and switching to small business shops and cafes shortly after. The pandemic propelled us into working on the pieces of ECR. In February 2021 we launched Edina Coffee Roasters online store, and a month later the coffee cart operation followed as a means to connect with our community.

After numerous events, markets, art fairs, we found an old sandwich shop location in Edina, MN this past September and began the transformation into a coffee shop. October 26th we opened to the public. We serve a standard coffee and espresso menu with a rotation of seasonal offerings. Along with that, we offering several coffee flight options so guests can try variations of espresso, cold brew, and filtered coffee.

What equipment do you use in your shop?

Our espresso setup consists of a La Marzocco GB5 and Mahlkönig K30. For batch brew we use Mahlkönig EK43 paired with a FETCO brewer.

Which roaster or roasters do you serve?

We roast our coffee off site at a co-roasting facility. We created a foundation of three blends that emphasize their own flavor profiles and roast levels—light, medium, and dark—but offer a new featured single origin each month. Our emphasis is on delivering quality and consistency while showcasing something new and exciting each month.

What is the neighborhood like where you’re located? What’s some other cool stuff nearby?

Edina is an amazing community. It’s a suburb of Minneapolis but has its own unique charm. Our shop is located in the business district of the Cahill neighborhood. Down the street you can find lots of great food—Indian street food, Equadorian, and American. We’re a short drive from Centennial Lakes for some outdoor fun or 50th and France for shopping and dining.

What’s something cool or unique about your cafe you want folks to know?

We are greatly influenced by the region’s Scandinavian heritage and you’ll see that in some of our featured drinks as well as our in-house baking. We aim to keep things simple so we can execute solid coffee offerings partnered with great hospitality.
