Phil & Sebastian announces the return of Project III, a collaboration bringing together three celebrated roasters and one exceptional coffee producer in a shared exploration of coffee, craft, and perspective.

At its core, Project III celebrates the relationship between the people who grow extraordinary coffees and the roasters who bring them to life. Each edition features a single producer, with three roasters each selecting a distinct coffee and roasting it to reflect their individual philosophies and styles. Presented together in a three-coffee box set, the result offers a rare
opportunity to explore the range of one producer’s work through three different lenses.

Following an inaugural edition featuring Mauricio Shattah of Finca La Negrita in Colombia, alongside Onyx Coffee Lab and La Cabra, Project III returns with a new producer, new collaborators, and an entirely different expression of the craft.

The Second Edition: Ratibor Hartmann

This edition turns its attention to Panama and the remarkable Geishas of Ratibor Hartmann, one of the most influential figures in specialty coffee.

Ratibor has spent decades questioning how coffee is grown, fermented, and dried, continually experimenting with new techniques and refining established ones. His approach combines meticulous observation with a willingness to challenge convention, exploring how even the smallest decisions can fundamentally change a coffee’s character.

His work has earned international recognition, including multiple first-place finishes at the prestigious Best of Panama competition and an extraordinary score of 96.50 points for his Geisha Natural in 2022.

For Project III, three distinct Geisha lots from Ratibor’s Mi Finquita and Guarumo farms have been selected, each offering a different expression of his work. From the clarity and elegance of washed Geishas to the expressive complexity of a Wine Globe Anaerobic Natural, these coffees reveal the breadth of what is possible through careful cultivation and processing.

Three Roasters. One Producer. Three Perspectives.

For this second release, Phil & Sebastian (Calgary), Proud Mary (Melbourne, Portland, Austin), and MAME (Zurich) have each selected a unique Geisha lot from Ratibor Hartmann, roasting it to reflect their individual approaches to coffee.

MAME has selected a Wine Globe Washed Geisha, with delicate notes of white tea, apricot, and grape. Proud Mary brings a washed Geisha with notes of jasmine, lemongrass, black tea, and orange candy. Phil & Sebastian’s selection is a Wine Globe Anaerobic Natural, an expressive coffee with notes of rose water, grape, butterscotch, blackberry, and tangerine.

Though all three coffees share the same producer, farm, and variety, differences in processing, growing conditions, and roasting reveal remarkably distinct results.

Together, the three roasters offer a unique comparative experience, celebrating not only the skill and curiosity of Ratibor Hartmann, but the individual perspectives of the people entrusted with sharing his coffees.

A Shared Pursuit of Excellence

“Ratibor is one of those producers who never seems satisfied with what he already knows. He’s constantly experimenting, questioning his methods, and finding new ways to push the quality of his coffees,” said Sebastian Sztabzyb, Co-Founder of Phil & Sebastian.

“What’s particularly exciting about this edition is that we’ve given three roasters the opportunity to choose the coffees that speak to them. Proud Mary, MAME, and ourselves all approach coffee a little differently, and the result is three very distinct expressions of Ratibor’s work. That’s really what Project III is about: celebrating the incredible work happening at origin, and exploring how different roasters bring that work to life.”
