One of the first major decisions one must make as a fledgling coffee gear nerd is conical versus flat burrs for their grinder. Are you chasing that syrupy god shot? Then maybe you want a conical burr. Or are you looking for maximum flavor clarity in you tea-like pour-over? Perhaps a flat burr is the best way to go. Of course the distinction and uses for the two isn’t quite so discrete. Many a delicious ultra-light filter brew has been produced by conical burrs and likewise, flat burrs are capable of producing a syrupy sweet ristretto.
Thus the decision is not so black and white. So which is it and exactly how much do you need to know about uniformity and bimodal distribution in grind sizes and what the difference between the two means in terms of flavor. On spec alone, we are pretty impressed. The LAGOM GDS, which stands for “grinding dynamics study,” is basically a one-stop playground for geeking out. At the heart of the grinder are two massive and massively different burr sets: a 100mm conical burr set and a 102mm flat burr set, both driven by a 1,650-watt brushless DC motor. Each burr set comes with its own adjustable RPM speed, 100–500 RPM from conical and 200–2,000 RPM for flat, and both allow for micron-level grind size adjustment. It also features a magnetic accessory system, allowing users to freely change between portafilter holder and dosing cup stand.
And in true fully-customizable fashion, the LAGOM GDS allows not only for a flat-and-conical configuration but also a flat-flat setup for the pour-over purist.
Now, a niche, high-end piece of machinery such as thing one comes at a cost. It is currently available for pre-order for $3,450 USD, with the limited initial run expected to be delivered in September of this year.
So it’s definitely not for everyone, but you may not be everyone.
