Another week, another Build—today we’re checking out the new roast works for Those Guys Coffee in New Hartford, CT.

For those who aren’t familiar, will you tell us about your company?
We are a coffee roasting company, also specializing in training and prosumer/commercial machines. We mostly focus on B2B but we also have strong community support in our town.
Can you tell us a bit about the new space?
The new space will feature an awesome variety of roasting equipment, alongside a well-stocked coffee lab, brew bar, dedicated cupping room, and a presentation area for training.
What’s your approach to coffee?
It’s our two-fold belief that following best practices gets you 90% of the way, and that final 10% is achieved by creativity and critical thinking. It’s true that there are a lot of unanswered questions in coffee, and a lot of traditional dogma that isn’t necessarily true. We think it’s important to understand the foundation that our industry is built on, but it’s equally important to question and confirm everything for yourself.
Any machines, coffees, special equipment lined up?
Roasters include Diedrich IR-5 and IR-1, IKAWA Pro50 and new Pro100X, Stronghold S7 and S9, and Sivetz S15 (with new features, the first of its kind!). We’re still deciding on a two-group espresso machine, but we’re leaning towards a La Marzocco Linea Classic, keeping it as simple as possible.
How is your project considering sustainability?
We use VortX water scrubbers on our roasters, rather than afterburners. Water scrubbers use no gas, just a small amount of electricity and water to reduce pollutants and capture particulates. We were the first roaster in New England to have a VortX, and when our Sivetz arrives we will be the first roaster in the world to have water scrubbers installed on both drum and fluid bed roasters!
