Whispered about in a thousand bull sessions, dreamed and discoursed over by countless ambitious baristas throughout the history of specialty coffee, it would seem that the folks at MadCap in Grand Rapids are actually going to achieve the impossible dream: this Sunday, August 21st, they will be serving a prix-fixe series of coffee “flights” delivered tableside, accompanied by local nibbles and (we’re assuming) plenty of sparkling water. Fine dining? Afternoon oouting? Ladies and gentlemen, this is the blurred wave of coffee.

(We’re joking. We joke sometimes on this website. “The Blurred Wave” is a stupid name for anything, except maybe an early-80s New Wave dance band, and even then.)

From the MadCap Blog:

On August 21, 2011 we look to extend the coffee experience one step further with the launch of Sunday Table Service. We will serve the same top-notch quality product, with some new twists, beginning with tableside service. Each menu will include coffee tasting courses, new featured coffee offerings, various brew methods and local/fresh food pairings. So please, come, take a seat, invite a friend, relax and join us in this experience.

The flight menu focuses on their current menu of African coffees – a Sidama, a Yirgacheffe and a Kenyan. Guests can enjoy a pour-over flight, an espresso flight, or 1 coffee served three ways – as espresso, pour-over, and an espresso milk drink of your own grand design.

Sounds pretty awesome, right? Seems like a great concept for a high end restaurant. (Danny Meyer, are you paying attention?) Anyway, we’re dying to see what this service looks like at MadCap. If done right, this could be a great model for large cafes and brunch spots.
