There’s just a few short days left of our 2021 Build-Outs of Coffee feature series, which concludes on International Coffee Day (September 29th). But before we bid you adieu, first we say hello to a new coffee bar in Woodinville, Washington, a wine-loving hamlet about a half an hour northeast of Seattle. This is Sidekick Coffee.
As told to Sprudge by Amy Siegel.
The 2021 season of Build-Outs is presented by Fellow. The series is sponsored by La Marzocco, Pacific Barista Series, Marco Beverage Systems, Dona, and Sustainable Harvest.
For those who aren’t familiar, will you tell us about your company?
Sidekick Coffee is Woodinville’s long-awaited independent coffee shop. Locally owned and community minded, you can rely on us for warmth, hospitality, and great coffee. We proudly serve Herkimer roasted coffee, pastries baked in-house, and locally sourced tasty eats. Take a coffee and treat with you on your adventure or sit down and stay awhile in our bright and refreshing space. Coffee makes a great sidekick. #coffeeisyourfriend.
Can you tell us a bit about the new space?
Located in the heart of the downtown district of Woodinville, WA. Surrounded by over 200 wine tasting rooms, a corner 2,100-square-foot shop on the ground floor of an apartment living village. It is spacious, and designed to feel light-filled and warm. A contrast to the “Seattle grey/Seattle freeze” vibes. Lots of indoor and outdoor seating with built in custom ash benches, 14′ Article leather couch, and a custom surfboard shaped ash wood community table. Handmade Moroccan terracotta tile backsplash and light blue glazed tile for the front of the large front bar. The space also provides a back room prep kitchen for business start-ups and a walkup window for dog walkers and for a quick to-go cup.
What’s your approach to coffee?
We were grateful to partner with Herkimer Coffee roaster from Seattle. They’ve been around for nearly 20 years and have direct relationships with each coffee farm they source from. They have a non-pretentious vibe, which I love. We/they are all about quality and relationships. We will offer their espresso blend for bar drinks and oh man, it tastes beautiful on it’s own and pair with milk. We will also have a rotating featured single origin on batch brew. As well as a coffee cupping/tasting for coffee club members, since wine tasting is a big thing in our area a lot of our customers will have a well developed palette.
Any machines, coffees, special equipment lined up?
La Marzocco Strada EP—pressure profiling! Anfim SP2 grinders, Mahlkönig batch coffee grinder, FETCO CBS-213XTS twin brewer, Turbofan double stack electric oven (for baking fresh pastries each day!)
What’s your hopeful target opening date/month?
We opened in summer 2021.
Are you working with craftspeople, architects, and/or creatives that you’d like to mention?
Architect—Wesley Pierce: Pierce Design, sub contractor for all custom built-ins—Creoworks, my husband Josh Siegel—custom wood art feature wall as well as logo, merchandise, and web design
