It’s finally here, the autumnal equinox. Gone now are the halcyon days of summer, and with them go the Build-Outs of Summer, this our seventh year. But before we smell you later quietly into that good night, we’ve still got one last Build-Out to bring you as part of the 2019 edition. And for that, we head to Sacramento, California for a brand new cafe from Temple Coffee Roasters.
Posting up in Midtown, the new outpost is the sixth location under the Temple moniker and the fifth in Sactown. Smaller and aesthetically different than the previous cafes, Temple Midtown is big on natural light and greenery. But even with the different appearance, the approach to coffee remains the same. So let’s check in for the last time with our final build-out, Temple Coffee Roasters in Sacramento, California.
The 2019 Build-Outs of Summer is presented by Pacific Barista Series, notNeutral, KeepCup, and Mill City Roasters. Error, group does not exist! Check your syntax! (ID: 46)
As told to Sprudge by Vincent Sosa.
For those who aren’t familiar, will you tell us about your company?
For almost 14 years, Temple Coffee Roasters has expanded into a nationally recognized coffee company with six retail locations, a roasterie, and worldwide wholesale presence. We roast all of our coffee on-site at our roasterie in Midtown Sacramento, adjacent to our flagship S Street cafe. Our company maintains its commitment to direct, ethically sourced green coffee from farmers and producers in Central America, South America, and Africa. This “Farm-to-Cup” coffee sourcing program is the cornerstone of our sustainable business practice and ensures that every cup of coffee served is of the highest quality.
Can you tell us a bit about the new space?
The new space is our smallest cafe to date, but easily our brightest and most vibrant. Of our company’s six locations, this new cafe has the most plant life of any cafe in the interior. The abundant greenery, white oak furnishings, and bamboo fixtures all contrast with the modern, loft-like space. The cafe’s interior complements the surrounding environment of the adjacent Fremont Park neighborhood, which is nestled in the center of the bustling Midtown Sacramento area. Visually, the space is meant to mix together elements of the urban landscape with the serene qualities of the bordering park.
What’s your approach to coffee?
Our approach to roasting is different for each coffee. When purchasing green coffee at origin from producers, we recognize that each coffee has a unique story. As such, we take the green coffee and compose a custom roast profile that showcases its distinctive qualities and highlights its individual story. Our Director of Coffee and Head Roaster take a tailored approach to roasting each coffee, working to achieve a coffee’s full potential through multiple cuppings and careful analysis. We firmly believe that great coffee is not an accident, and we strive to reach the pinnacle of flavor and aroma with each roast every time. Error, group does not exist! Check your syntax! (ID: 46)
Any machines, coffees, special equipment lined up?
The new cafe features a new La Marzocco KB90 espresso machine that we’re very excited about! We also have four Seraphim single-cup brewers, four Baratza Forte grinders, three Mazzer Kony Electronic grinders, and one Mahlkönig EK43 grinder. As for coffee, the cafe will have Nitro Cold Brew on tap, plus our entire line-up of single origin and blend coffees. The new cafe is also our first that will serve organic Matcha from Uji, Japan, served as a hot or iced latte.
How is your project considering sustainability?
It was important for our company to take a financially responsible approach to opening this new cafe. We have always been a debt-free company, and opening this cafe without any borrowed funds reflects our commitment to fiscal sustainability. The building that our new cafe is housed (16 Powerhouse) was the first LEED certified building in all of Sacramento, California. The building currently has LEED Gold Certification.
What’s your hopeful target opening date/month?
We opened up shop on July 20th, 2019.
Are you working with craftspeople, architects, and/or creatives that you’d like to mention?
We’d like to give a shout out to our CEO, Sean Kohmescher, for designing the interior of the cafe!
Thank you!
