We’re excited about this one! Meet Brewshop, our first Build-Out from Israel in series history. This sunny little cafe will be bringing in top roasters from across Europe to Israel, including Five Elephant and The Barn, both based in Berlin. In what’s becoming something of a trend for Build-Outs (and elsewhere on Sprudge, come to think of it), Brewshop will offer no espresso service, making it the latest in a line of trendy filter-only cafes to open in the last year.

The space looks airy and bright, and features some really exceptional reclaimed woodworking from an Israeli design studio. The beach is just blocks away. This cafe sounds dreamy. I want to go to there.

For those who aren’t familiar, will you tell us about your company?

Brewshop is opening up as a “sister café” to Café Xoho, an already established neighbourhood café/restaurant. We wanted to bring something different to the café scene here. My dream was always just to open a filter bar and then this perfect opportunity came up which has allowed us to do just that.

Can you tell us a bit about the new space?

We took on this really small space (around 16sq m) a few doors down from Café Xoho. This is central Tel Aviv, just a couple of blocks from the beach. It operated as an old antiques shop for years, so we’ve had to completely fit it out with electrics, and install plumbing. It’s super simple and stripped back; the idea was always to focus on the coffee with as little distraction as possible.

What’s your approach to coffee?

Tel Aviv has a wonderful café culture, but sadly commoditized coffee is the norm here. The whole city drinks espresso lungo. So we have a great opportunity to show Tel Avivians how diverse and delicious coffee can be. Approachability will be key for us at Brewshop. We’ll have an unpretentious environment creating really well-crafted coffee. We’re excited to be working with some ace roasters from all over Europe starting off with The Barn and Five Elephant from Berlin.

Any machines, coffees, special equipment lined up?

We’re not offering espresso at all, so the focus is on filter, which we will be offering via AeroPress, Clever Dripper, Hario Woodneck, and Kalita Wave brewing methods. We’ll also be bottling up cold brew from a Filtron Pro, triple filtered through paper and cloth. For grinding, we have the ever reliable Ditting KR804.

Are you working with craftspeople, architects, and/or creatives that you’d like to mention?

We had our bar built by Shlomi at Artizachen, who have an ace studio in Jaffa. He uses reclaimed wood to build beautiful pieces of furniture. Our gorgeous logo was designed by Gal Cohen. And props must go to our contractor Shimshon for solving every problem we had with the space.
