The air is changing. The kids are back in school. We’re mere days away from meaningful football. Fall is coming, but here at the Build-Outs of Coffee, we aren’t slowing down one iota, with more incredible new cafes under construction or recently opened all around the world. In today’s entry we’re checking out a new cafe called Spectracolor in Easton PA, an hour or so north of Philadelphia and just outside of Allentown.

For those who aren’t familiar, will you tell us about your company?
We believe in colors. Many colors. Endless colors. We believe in the vibe. We believe color is a vibe. Every color. And every vibe. We believe in boosting the vibe. Or helping find the vibe. Or sharpen it. Or deepen it. Darken it. Lighten it. We believe every mood is a color, and for every color there is a coffee. We believe flavor is a color. We believe every cup of coffee is a prism. We believe in you. We believe you deserve a coffee for every mood. Every energy. Every vibe. Every day.
Can you tell us a bit about the new space?
The place is outfitted in what I like to call a “fever dream of color.” There are lots of ’70s vibes with retro, poppy furniture, ’70s striped walls, and a psychedelic counter made of salvaged glass block. Most of the are finds from Facebook Marketplace.
What’s your approach to coffee?
Spectracolor is a medium roast roaster in the specialty coffee world. As a roaster, Fay draws as much sweetness and juiciness from the bean as she can, resulting in a smooth and flavorful cup. She has four core blends:
Luster—Anytime Blend
Black Out Theory—Dark Roast Blend
Mood Ring—Espresso Blend
Lo Fi Crush—Decaf Blend, each of which are currently served and sold at the shop. She will soon be adding single origins to the menu and a Poursteady (a programable pour-over machine) to serve them.
Any machines, coffees, special equipment lined up?
My espresso machine is a Synesso Hydra. I have a PS2 arriving in August from Poursteady.
What’s your hopeful target opening date/month?
We opened on June 1st, 2024.
