Is this the most stunning, beautiful, jaw-dropping build-out we’ll feature this year on the Build-Outs of Coffee? Well… it’s early. It’s still June! We’ve got several months of builds left on the calendar. But damn is Cartagena, Colombia’s Cafe San Alberto has not set a very very high bar as the premier build of the series. The gauntlet has been set. This cafe is a gob-smacker.

For those who aren’t familiar, will you tell us about your company?
Growers and roasters of Colombia’s most award-winning coffee. We have six coffee temples, shops where we honor our craft.
Can you tell us a bit about the new space?
In the center of Old Town Cartagena, we have opened a coffee temple, a place that will become the epicenter of specialty coffee for the city. A real icon for Colombia’s coffee.
What’s your approach to coffee?
Single origin coffee from our own farm, brewed through multiple alternatives in an effort to surprise visitors and honor our family tradition. A complete coffee experience with tons of connection with our farm and a lot of interaction between visitors and baristas, who brew most of the drinks at the table.
Any machines, coffees, special equipment lined up?
La Marzocco espresso machine, Hario double cold drip tower, Chemex, siphon, and v60.
How is your project considering sustainability?
We have replaced inside service to 100% non-plastic containers. Not even carton cups inside, only to-go. Pastries and food are 100% sourced from less than 50 miles around.
What’s your hopeful target opening date/month?
We opened at the beginning of the year.
