It really *shouldn’t* be that surprising, but we’ve been surprised nonetheless at the quantity and quality of Build-Outs flowing in this year from the North Texas coffee scene. It feels like every week we’re featuring a cool new cafe from somewhere like Dallas or Denton, and today the trend continues with a look at Ostara Coffee in Fort Worth, Texas, set to open in October.

For those who aren’t familiar, will you tell us about your company?

Ostara Coffee Roasters is North Texas’s first 100% women-owned and -operated coffee roaster.

Since 2022, we’ve been dedicated to enhancing the Fort Worth coffee scene by locally roasting our beans, perfecting every cup we brew at our shop, and bottling the tastiest cold brew in Texas! Our dedication to quality and community is at the heart of everything we do, from our sustainable business practices to our ongoing collaborations with our community.

Sharing a cup of coffee has always been an important ritual for us, and we hope we can make it special for you too.

Can you tell us a bit about the new space?

3,000-square-foot combined space that will be used as a coffee shop and wine bar and also as a production space where we’ll house or 25LB San Franciscan roaster. We brew our cold brew in a fermenter at the brewery next door.

What’s your approach to coffee?

We’re trying to roast the tastiest beans and brew the tastiest cold brew in Texas!

Any machines, coffees, special equipment lined up?

SF25 Roaster, Slayer Steam LP espresso machine

How is your project considering sustainability?

We practice sustainability as a company through a bottle recycling program. We use glass bottles for our cold brew that can be re-used up to 20 times before being recycled and we take all intact bottles back for a credit towards the next purchase. We also recycled the wood from the original bar—the brewery next door took it to make more tables, and we’re creating a living patio with built in green space with native plants instead of soil-sealing more green space. We’re also taking advantage of the Texas sun with solar patio lighting.

October 2024

Are you working with craftspeople, architects, and/or creatives that you’d like to mention?

Brandon Pederson of Brother Sister Design is designing our bar and also constructing it, SM Sanz will be painting a mural on our patio.
