It has been a heck of a 6 months for specialty coffee in the city of Olympia, Washington. First it was Bar Francis, then the stunning new Olympia Coffee Roasters cafe on Capitol Boulevard, and now meet Method Coffee Bar, located at 1018 Capitol Way South (just blocks from the beautiful Washington State Capitol Building). Method opened just three short days ago, and is the work of Matt Chrisope, a US Regional Barista Competition competitor and judge, and Jared Gum, a longtime Olympia Coffee Roasting barista and Brewers Cup competitor. Startup costs for this cafe were partially funded via a campaign on IndieGogo. 

They’ve got some great gear running at Method: three Vario-W grinders boast three distinct selections of filter coffee, available as a siphon or pour-over with your choice of Kalita Wave or baby Chemex. For espresso, it’s a La Marzocco Strada MP paired with three Robur E grinders. The coffees available when we visited were all from Olympia Coffee Roasting, including their organic Ethiopia Konga Yirgacheffe, Panama Lerida, and OCR’s signature Big Truck Espresso blend. Starting later this week, the menu will expand to include offerings from Verve Coffee Roasters in Santa Cruz.

The cafe itself is in the lobby of a mixed-use building, and will soon boast ample seating for guests. They’re serving baked goods from Left Bank Pastry, a well-regarded Olympia bakery with literally zero linkable web presence. Hours at Method are 6:30AM to 5:00PM on weekdays, 8:00AM-4PM on Saturdays.
