Mahlkönig Releases The Definitive “Coffee Shot 101″ User Guide

The Coffee Shot, man – it’s taking the world by storm. This new / old way to approach brewing coffee on an espresso machine is all the rage in discerning speciality coffee circles, and it may be coming to a boutique coffee bar near you. But how does it work? And what does it mean? And should you order one?

Let’s demystify the Coffee Shot a bit (we’re using proper noun form in recognition of the Coffee Shot zeitgeist). You take a Mahlkönig EK43 coffee grinder and an espresso machine, and you make a cup of brewed cup coffee with it. It’s like having a cup of coffee that looks and acts and tastes like a pour over, or an Aeropress, or a cup of batch brew, but it’s coming out of the espresso machine. The Coffee Shot subverts our expectation of what espresso machines were meant to do. It’s nothing short of a little bombshell.

For an authoritative look at the Coffee Shot, 2013 Australian Barista Champion Matt Perger (of the St. Ali Family) has collaborated with Mahlkönig to produce a handy “Coffee Shot 101″ guide. Mahlkönig released this guide earlier in the week via Facebook:

The Coffee Shot isn’t exactly “new”, by the way. The Italian deli around the corner has been making Americanos this way for years! Just let that baby run! And coffee nerds have been jabbering about Coffee Shot-esque drinks on the internet for at least a decade. There really is nothing new under the sun.

However, this particular, rather more refined recipe – developed by the aforementioned Matt Perger and an international speciality coffee consultant named Ben Kaminsky – was introduced to a world audience at the 2013 World Barista Championship:

Since then, the Coffee Shot has taken well-heeled cafes the world over by storm. And with the release of Mahlkönig’s definitive how-to guide, surely it won’t be long before the Coffee Shot is available at a cafe near you. Try one; maybe you’ll like it. We guarantee that having a working knowledge of the Coffee Shot will delight and astound your barista (feel free to add in something like “this is as good as anything I’ve had in Melbourne!” for an extra dose of flattery).

    I’d just like to say that this is deffinetley an experimental practice at the moment and unless you have been to the Kaminsky lectures, or had the pleasure of having one made by Matt or Ben then you need to take things with a pinch of salt. It is extremely easy to get this wrong. I attended Bens class in London and had some of the best coffee I’ve ever tasted. Since then I have had some terrible coffee shots and also some excellent well balanced beverages. The level of accuracy that these drinks are ment to be taken to is easily not achieved. You can’t wing this kind of stuff or it can taste unbalanced in an instant. I think a lot of people haven’t taken well to this style of drink it has caused a lot of deliberation within the industry to what is acceptable. I just felt I had to say this as someone in the industry who has attended the lectures and has since been experimenting with this.

    I’ve tried it, running a Ducale Coffee Ethiopian Djimma through a Linea, and whilst a little muddier than you’d get through your V60 or Swiss Gold, after decanting it was bloody good! Much quicker, too, so I can see the commercial viability.

    I wouldn’t mind seeing a list of all the cafes in the US pulling coffee shots. Can’t say I’ve ever seen or even heard of places highlighting it as a consumer choice. Have any of the big names in specialty coffee appropriated the practice?

    We started offering this at our cafe! Although we don’t have an EK or VST baskets. We just guesstimate and our customers love it! We have a special drink called the Perger Surprise that includes an all-vegan coconut milk base and a few pumps of watermelon syrup! It’s divine!

    I, for one, think that the Coffee Shot is Coffee Shit! If I wanted a brewed coffee, I’d order one. Don’t spend ten minutes dialing in something stupid just to pull me a shitty shot of your single-origin bullshit in a 8 ounce cup. It tastes like garbage and I’d rather just die.
