This year’s edition of the Build-Outs of Coffee has set out to offer a particularly global focus, looking for new cafes recently opened or under construction in every corner of the earth. That’s why we’re thrilled today to dig deeper on the story of Deep Coffee, a lynchpin in the Marseille specialty coffee community whose new cafe opened very recently. Let’s take a deeper look, shall we?

For those who arenโ€™t familiar, will you tell us about your company?

We are speciality coffee roasters and coffee shop based in Marseille, France, we opened five years ago and were more or less the first to introduce speciality coffee to that extent in which is the second biggest city in France. We started off with one small boutique with everything squeezed in there: the coffee shop, our little mini bodega corner, and the roasting facility in the back.

Can you tell us a bit about the new space?

We just finished building a coffee shop in an old newspaper kiosk in Marseille. The outside of the architecture stays untouched and we completely remodeled the inside into a coffee counter you can either seat at the counter and enjoy the show of of hand brew coffee being made directly on the street or just take it to go. We kept the heritage of the space sell specialty magazines carefully curated for all things underground culture, music, sports, food, travel, and fashion. We also curate art exhibit of the sides of the kiosk in the place of the classic huge ads you usually get, trying to focus the work of creative studios, photographs, illustrators, and so on.

Whatโ€™s your approach to coffee?

Since we manage also the roasting aspect of the coffee brew, we pride ourselves on really taking special care on traceability all along of the coffee life, making sure we work fairly with all the people that our involved. And obviously we do our best to always to get the best of each lot we careful select.

The hospitality aspect in our coffee shop is also very important, we want speciality coffee to be approachable and appreciated equally by first time drinkers and extreme coffee enthusiasts. We also make sure to have a laidback and friendly welcoming attitude. As we like to say about our shop, it’s a local hang where chill time is welcomed.

Any machines, coffees, special equipment lined up?

In the kiosk we use for our espresso a two-group Victoria Arduino Eagle One with a Mythos One grinder. For our filter coffee a Mahlkรถnig EK43 grinder and brew with v6o into kits.

How is your project considering sustainability?

Obviously recycling plastic, glass. We also collect all our coffee grounds for a company who makes compost and we push the best we can our clients to purchase our reusable cups. All our packaging for our coffee beans are also recyclable and all our bags and to go cups as well.

Whatโ€™s your hopeful target opening date/month?

We opened in late March 2022.
