This week we’re visiting Peixoto Coffee Roastersย in Chandler, Arizona. Like so many cafes around the countryโ€”indeed, around the worldโ€”Peixoto has had to stay nimble to adapt to the challenges of 2020. “Overnight, we had to change to a fast, online, and curbside service model,” they tell us. Fortunately at the six month mark, the cafe has things dialed in, and are enjoying the support of their dedicated regulars. “our community has showed us even more love and support than before.” That’s serious coffee love.

Hello! We are Peixoto Coffee Roasters. Letโ€™s get the pronunciation out of the way, โ€œPAY SHO TOWโ€. Our name comes from the family name of our owners. We have a family farm in the state of Minas Gerais, Brazil, so we GROW, ROAST, BREW our own coffee! Our cafe is in Downtown Chandler, AZ. We are privileged for the opportunity to share our coffee and story with our local patrons and visitors from all over.

What equipment do you use in your shop?

We strive for quality and consistency through every step of the coffee process, so we have chosen equipment to meet these standards. Making an espresso starts with grinding on a Nuova Simonelli Mythos 2 grinder and we tamp the coffee bed using a Puqpress. We have a Sanremo Opera espresso machine giving us the ability to design multiple recipes for different beverages. For pour-over, we grind on the ever-present Mahlkรถnig EK43 and use Fellow Stagg kettles for steady flow rate.

Which roaster or roasters do you serve?

We roast our own coffee, and we always have coffee from other farms/regions throughout the world. Our Head Roaster/Green Buyer has his โ€œQโ€ certification, and sources beautiful coffees we feature throughout the year.

What is the neighborhood like where you’re located? What’s some other cool stuff nearby?

Downtown Chandler is a historic part of the city and features everything from locally-owned restaurants, shops, and bars to City Hall and a great library. Historic San Marcos Resort is a great place to stay and weโ€™re surrounded by local shops selling wonderful Arizona gifts or arts.

Did you close during a mandated Coronavirus shut-down, and if so, for how long?

We did not have to close because of a mandated Coronavirus shutdown. To do our part, we voluntarily closed the lobby/sitting space of our cafe six months ago, and switched to a curbside pick-up only business. Our customers adapted quickly to the new service model. We greatly miss interacting with our customers, but are forever grateful for their constant support.

How has Coronavirus impacted daily work at your cafe?

The pandemic changed the daily work at our cafe significantly. Our business was founded on the premise of being able to tell the story of connection with our farm, the source of our coffees, with every cup of coffee served. Overnight, we had to change to a fast, online, and curbside service model, where the connection with our customers was no longer present. We have pivoted and found a way to stay engaged with our customers through social media, through the quality of our service, and the coffees we offer for customers to take home. From the beginning of the pandemic, we have spoken openly and transparently to our customers about the challenges and the impact the pandemic had in our business, and our customers appreciate that level of realness and vulnerability. If nothing else, our community has showed us even more love and support than before because of the openness we showed during the pandemic.

What’s something cool or unique about your cafe you want folks to know?

We want people to know how important their role plays into our complete vertical integration coffee chain. The dollars spent in our cafe have significant impact on the lives involved in the whole coffee chain, and their dollars go further because they are spread amongst fewer individuals.

Is there a community organization or charity you’d like to shout-out as part of this feature?

A shoutout to our wonderful customers who show up day in and day out to support us as a business but also to support our hard-working employees who serve them. Also a shoutout to all our healthcare workers who have been working so hard, risking their own lives, to care for others. We like to caffeinate these real-live heroes!
