In July, Olympia Coffee announced a brand new flagship cafe in Seattleโ€™s Columbia City neighborhood, and today, Monday, December 16th, it has officially opened. Olympiaโ€™s now-open sixth location is their third outside of their namesake city and their second in Seattle.

When we previously checked in on the new project, owners Oliver Stormshak and Sam Schroeder were hopeful that the build-out would be completed within four months and they werenโ€™t too far off; the total build time clocking in just under six. Now fully operational, the coffee program at the 1,750-square-foot cafe is anchored by a Slayer Steam LP for espresso-based drinks, with brewed coffee coming from either the FETCO batch brewer or Kalita Wave pour-over made via the automated Poursteady.

To pair with their beverages, Olympia is providing a host of food options made by local provisioners. Sandwiches will be provided by โ€œsustainable sandwichโ€ company Homegrown, pastries from Left Bank Pastries, and Umami Kushi will be providing okazu pan, a โ€œsmall grab and go bread that consists of a savory filling.โ€

“In planning this location we wanted to build a cafe that focused on our mission: ‘To improve the quality of life for our farmers, staff, and customers,'” Stormshak tells Sprudge. “We are looking forward to also hosting other roasters and coffee machine manufacturers to lead discussions about their products in this space in the future, building community within our coffee community as well.”

Along with the cafe, Olympia’s flagship Seattle location will feature both a Barista Training Center and a Community Room. The Community Room will act as “a reservable space for local businesses, non-profits, and community groups to meet.”

Hours the new location are 6:30am to 7:00pm on weekdays, 7:00am to 7:00pm on Saturday, and 7:00am to 6:00pm on Sunday. For more information, visit Olympia Coffee’s official website.
