It’s been an incredible first week back on the Build-Outs feature series, with looks at cafes all around the world. We’re finishing off this breakneck pace with a visit to the city of Asheville, North Carolina. That’s where you’ll find Pollen, a coffee bar and flower studio hybrid with a charming approach to both disciplines.

For those who arenโ€™t familiar, will you tell us about your company?

Pollen is a cafe and flower studio in Asheville, NC. Pollen is focused on uncompromised self-expression through flowers, coffee, design, art, and music.

Whatโ€™s your approach to coffee?

We work exclusively with SEY out of Brooklyn. Our approach is simple: we let machines do the work humans can’t. We dial everything in obsessively. We do our best to let these amazing coffees shine :)

Any machines, coffees, special equipment lined up?

La Marzocco Linea PB AV, Curtis G4, Mazzer ZM, Fellow kettles for tea behind the bar and wholesale.

How is your project considering sustainability?

Composting all coffee grounds, composting all flower stems and biodegradable floral byproducts.

July 1st.
