Some things change, in coffee and life, yet some things stay the same. One trend that’s held on as a constant favorite here at Sprudge is the multi-roaster coffee shop. Whether a cafe is cycling through featured roasters, or offering multiple brands on bar at the same time, the multi-roaster offers consumers an engaging and fun way to try different roasters, all dialed in with the expert care of a professional coffee bar team. When it’s done well, there’s really nothing quite like it.

Today on Build-Outs we’re taking a look at Saint Nine Coffee in London, a coffee bar that’s served some of England’s most interesting roasters over the last year, including Round Hill, Assembly, and North Star, to name just a few. Consider this an exciting addition to London’s incredible coffee scene, which we’ll be spotlighting on Sprudge in a guide series throughout the coming months.

For those who arenโ€™t familiar, will you tell us about your company?

Saint Nine Coffee was founded in August 2020. We are admirers of great coffee and great people. The shop is an extension of our home, and hospitality and care are at the heart of what we do. We hope to have a meaningful impact on peopleโ€™s lives, promote happiness and create a memorable experience for anyone that visits Saint Nine. Above all, we value kindness.

Can you tell us a bit about the new space?

The completed interior, by OAOA Architecture, features a statement mural which wraps up the curving wall and across the ceiling. The original from artist Gabe Sapienza was printed onto fabric and fixed into place. A pared back, minimal interior featuring curved matte black walls and countertop complement the artwork and feature lighting guides the eye through the space.

Whatโ€™s your approach to coffee?

At the end of the day, we champion consistency, simplicity, and taste through our unique and high quality offerings. We work with people and roasters with similar values and standards to us. We like to know a coffee inside out before serving, and are meticulous about ensuring quality in every cup. Our approach is to serve something that appeals to our local community and is truly enjoyable. Weโ€™ve featured some of the best roasters from across the UK including Round Hill, Assembly, Bailies, and North Star.

Any machines, coffees, special equipment lined up?

Right now we are loving and pouring the Nota blend from Bailies Coffee Roasters.

How is your project considering sustainability?

With every supplier, we consider sustainability and environmental impact. We try to minimize our waste and keep things to the essentials.

Whatโ€™s your hopeful target opening date/month?

We opened in August 2020, and closed for lockdown twice during the winter. We recently reopened in April 2021 and are hoping this one will stick!
