With cautious optimism, grateful hearts, and a deep respect for the international coffee community, Sprudge is thrilled to announce that submissions are now open for the 2021 season of Build-Outs of Summer. The feature seriesโ€”a beloved annual tradition here at Sprudge since 2012โ€”returns after an agonizing absence in 2020, when cafe openings slowed to a trickle due to coronavirus limitations. The coronavirus is still very real; this is a new reality that service workers, cafe operators, and entrepreneurs will be grappling with for years to come. But nature is healing. New coffee bars, espresso rails, and cafe hybrids are opening around the world. The team might be masked, but the thrill of the build is back, baby, and we’re living for it, hunting near and far for the coolest and most exciting new cafes around the world.

For the 2021 edition we’re taking a big-tent approachโ€”think of this more as a Build-Outs of Coffeeโ€”meaning that we will accept build-out submissions for new cafes that opened at any point during the pandemic,ย an event that disrupted construction and permitting schedules starting in March 2020 (those disruptions remain ongoing for many). We are also accepting submissions for cafes presently under construction, with plans to open at any point in 2021. Yes, coffee carts are allowed (coffee carts are the best). Yes, we want to feature your cool artsy coffee pop-up. Yes, your one-wheeled mobile bagpipe coffee tricycle is eligible. More friends, more cafes we say! Hang those who talk of less.

Submissions are now openโ€”consider this yourย open call to be featured in the 2021 Build-Outs of Coffee series. This year we’re looking for:

  • New cafes under construction between March 2020 and September of 2021
  • Cafe remodels that will be completed by September 2021
  • Tiny new cafes built on zero budget
  • Expansive new cafes that push coffee design concepts forward
  • Coffee bars considering sustainability and environmental impact
  • Cafes from North America, South America, Europe, Africa, Asia, and Antarctica (especially Antarctica) are eligible. Weโ€™d also gladly welcome any keen fit-outs from Australia and New Zealand, so good on ya.

The Build-Outs of Coffee 2021 season will kick off on June 1st, 2021 and close in late September. Submitting your cafe to be featured is absolutely 100% completely freeโ€”we do not charge a submission fee, and there is no cost to submitting cafes at any step of the process.
